Ingredients
8–10 slices turkey breast (thin-cut deli or roasted)
4 oz cream cheese (softened)
1 tbsp Dijon mustard
1 cup fresh spinach leaves
Half cucumber (thinly sliced)
1/3 cup shredded carrot
4 slices cheddar cheese (thin)
Salt and black pepper to taste
Red pepper flakes (optional, pinch)
Instructions
Mix cream cheese with Dijon mustard in a bowl
Spread mixture evenly on turkey slices
Top each with spinach leaves, cucumber slices, shredded carrot, and a cheddar slice
Season with salt, pepper, and red pepper flakes (if using)
Roll tightly and secure with toothpick if needed
Store in an airtight container
Notes
Use low-sodium turkey for reduced sodium content
Substitute cheddar with gouda or provolone if preferred
Whipped cottage cheese can replace cream cheese for extra protein
